About L’escale

Welcome to L’Escale, my labor of love and a reflection of my passion for French cuisine and Caribbean flair. I’ve always been a bit of a “Francophile”, starting at 11 years old as an exchange student in France followed by stints of Can-Can Dancing in Paris & Monte Carlo – I loved food then, but had to curb my appetite to fit into the costumes!

After spending many years soaking in the vibrant culture of St. Martin and the timeless culinary traditions of France, I wanted to bring a piece of that magic home. At L’Escale, I’ve poured my heart into crafting a warm, inviting space where you can enjoy fantastic cheese boards, specialty cocktails, and the flavors I fell in love with.

As the owner of Bananas, this next chapter is a personal journey to share my love for food, culture, and unforgettable experiences.

What Is French Caribbean Cuisine?

French Caribbean-Cuisine

The French colonised many of the Caribbean islands back in the 17th century ( notably Martinique , Guadaloupe , and St Barths ) and bought with them their love of refined cooking techniques, pastries and love for Wine and cheese.  This melting pot of the Caribbean palate and French gastronomy has created a distinctive culinary identity. The position of these island as traditional trading posts means that they had access to an enormous variety of spices and ingredients from around the world.

At L’Escale it is our pleasure to introduce you to some of these classic unmissable dishes.

ACCRAS DE MORUE
Salted cod fritters, crispy on the outside , soft on the inside.

BLAFF
a spicy fish broth

COLOMBO
a curry like dish made with meat . fisher vegetables

LAMBI (conch)
served in a sophisticated “Gratin” or as a Salad.

SAUCE CHIEN
the use of seasoning peppers and scotch bonnets combines with tomatoes peppers and onions to produce a fiery sauce which is unbelievable with fresh snapper or accras

TOURMENT D’AMOUR
(actually originally from St Kitts and Nevis, a tart that the local ladies prepared with Love for their Fisherman husbands when they returned home from the sea)

What We Do

Private Functions

Whether its an intimate dinner Party for 10 with a traditional French Menu or a Garden Party for 60 with food stations and passed wine and cocktails, L’Escale has many creative solutions for the perfect event. We have 4 separate areas which could be at your disposal for a private event…

– Our main restaurant seats maximum 50 for a sit down dinner.

– The Garden Gazebo can comfortably seat 10 persons

– Our sunset deck is the perfect venue for cocktails and sharing platters for up to 40 pax (more if you include the actual Bar area)

– In our ocean front garden, we can do formal seating or high Tops for a sophisticated cocktail reception, dinner or buffet. Should you wish to enjoy our entire property for your special occasion, there is no rental fee but a minimum spend of 3500 USD on your food and beverage. L’ Escale in its entirety can host up to 150 people . Entertainment can be arranged at an additional cost.

– Our team of chefs can create a french menu or a typically Caribbean menu to your tastes.

We really enjoyed our dinner at L’Escale as well as the live music! We had two delicious drinks (highly recommend their signature drink the Brigitte Bardot) and the three course meal. Service was excellent and the food was all delicious. Definitely a good place to go if you are looking for creative cocktails and an extensive wine list.
